With the help of a recognition test and a threshold test, the sensory perception capability of the examiners is tested. The threshold test contains the determination of the trigger, the differential, the recognition and the saturation thresholds (DIN 10959, 10961). The aim is to check the sensitivity of the sense organs as well as the selection and training of the examiners.

Recognition and threshold tests are used in the case of basic tastes. Here, a diluted solution with an ascending order of a substance concentration (e.g. sugar) is used. Should a change of taste be recognized for the first time during testing, then this is a trigger threshold. Can the taste substance be categorized, then this is the recognition threshold. When carrying this out, re-tasting is not permitted.
