Malt flours and malt extracts

Malt flours and malt extracts are traditional and original ingredients of the bakery which have been used for many years in the production of baked goods. Historically, malt was initially only used for the brewing process, before the positive baking technological properties were also made use of for the manufacture of baked goods. Malt products are offered in different forms, a large section is in flour form but, over and above, liquid-viscous products and preparations in paste form are available on the market.
