Spoilage organisms

The so-called bread diseases are triggered by certain spoilage organisms. The relevant spoilage organisms for bread are primarily mould fungi. Over and above, various types of yeast occur as spoilage organisms. In addition, there is spoilage known as “rope disease”, which is caused by bacteria of some types of Bacillus. These bacteria can form spores which, in part, survive the baking process.
