The baking process

Through baking, the transformation of fermentation-mature, sensitive dough pieces into shape-stable, aromatic baked goods takes place. Fundamental material changes, which occur during the baking process, are the denaturing of the proteins as well as the gelatinization of the starch. During the baking process, a great number of aroma links form mainly in the crust, which are decisive for the aroma of the baked goods.
