Wholemeal baked goods made from milled spelt products are particularly popular with many consumers and, compared to wholemeal wheat baked goods, there is a larger selection of wholemeal spelt baked goods to choose from. In addition to the typical representatives such as wholemeal spelt tin bread or oven-bottom wholemeal spelt bread, also many types of wholemeal morning goods are meanwhile made from spelt. In 2018, wholemeal spelt bread was voted bread of the year by the Deutsches Brotinstitut (Deutsches Brotinstitut, 2018). Compared to wholemeal rye baked goods, wholemeal spelt baked goods require less acidity and are characterised by a mild-aromatic taste.
