Baked goods made from milled spelt products are of particular relevance in Western Europe. Whether it is the shop counter of a small artisan bakery or the bread shelf of a food retailer – you will usually find at least one type of baked goods made using spelt. In Germany, Austria, Switzerland and the Netherlands in particular, many traditional baked goods are made using spelt flour. In addition to bread and morning goods, numerous baked goods ideas have meanwhile been realised using confectionery yeast doughs and plain cake batters using spelt. Spelt, as a traditional grain, enjoys a positive image among consumers. However, it must be mentioned that baked goods made from milled spelt products do contain gluten, just like wheat baked goods, and should not be consumed if one has been diagnosed with coeliac disease (gluten intolerance).
In Germany, according to the Leitsätze für Brot und Kleingebäck, at least 90 % of the milled grain products used must come from spelt in order for baked goods to be labelled as spelt baked goods (Leitsätze für Brot und Kleingebäck 2021).
