After processing, the dough pieces are placed on wooden boards, peel boards or on trays with dough piece cloths. It depends on the machine equipment and the further processing which setter is chosen. To prevent the pretzel arms from slipping inwards, proofing is partly done with the arms positioned on the support surface. However, this requires an additional processing step, as the dough pieces have to be turned before being treated with lye.
