Treating the well-stiffened dough pieces with lye is one of the most critical process steps. Putting the dough pieces into a lye bath by hand and taking them out again only makes sense for small quantities. For larger quantities, it is advisable to use a lye application machine. Always wear appropriate protective equipment (safety goggles and gloves) when handling the lye.
There are different types of lye application devies:
- Manual dipping devices, where a tilting device is used to dip the dough pieces into a lye bath.
- Automatic lye application systems that guide the dough pieces through a tunnel, in which they pass through several lye curtains.
