Today, gluten-free baked goods can be found in the food retail range as frozen or packaged baked goods with a longer shelf life. Some are available as pre-baked products for completion of baking. Furthermore, there are numerous bakeries that offer freshly made gluten-free baked goods. 

The majority of gluten-free baked goods are produced by bakeries that have specialised in the exclusive production of gluten-free baked goods. The background is the very high cleaning effort required for production facilities when gluten-free baked goods are produced alongside conventional products containing gluten. This cleaning is necessary in order not to exceed the legal limit of 2.0 g gluten/100 kg baked goods (20 ppm) in gluten-free baked goods. 

The market for gluten-free foods is showing strong growth. In 2024, the global market volume was around USD 2.3 billion. An increase to around USD 4.2 billion is expected by 2030. At around 64 %, baked goods products account for the largest proportion of gluten-free food. Sales of gluten-free baked goods in Germany in 2024 were around USD 294 million (Grand View Research, 2025).
